This classic Italian pasta proves that you can create a powerful dish with just a few ingredients. The secret? A good quality extra virgin olive oil with a spicy finish , perfect for bringing the garlic and chilli to life.
Why use Robust Olive Oil?
Olive oils with a strong flavour and peppery finish (such as Picual or Coratina) are perfect for warm applications. They retain their character and give depth to dishes.
Ingredients (for 2 persons)
- 200g spaghetti
- 3 cloves garlic, thinly sliced
- 1/2 red chili pepper (or 1/4 tsp chili flakes)
- 4 tbsp extra virgin olive oil
- pinch of salt
- Fresh parsley (optional)
Preparation method
- Cook the pasta in plenty of salted water until al dente.
- Meanwhile, heat the olive oil over low heat. Add the garlic and chili.
- Fry gently until the garlic is golden brown (do not let it burn!).
- Drain the pasta and add immediately to the pan with the oil.
- Mix well and serve with fresh parsley.
