Greek Salad in 5 Minutes with Early Harvest Olive Oil

The real star? A fruity, early-harvest extra virgin olive oil from Greece that makes every ingredient shine.

Why use Early Harvest Olive Oil?

Early harvest olive oils are pressed from young, unripe olives. They are:

  • Spicy and grassy in taste
  • Have a light peppery aftertaste
  • Contain more antioxidants (polyphenols) and are therefore extra healthy

Perfect for use cold in salads, where the flavour comes into its own.

Ingredients (for 2–3 persons)

  • 200g cherry tomatoes, halved
  • 1 cucumber, cut into half moons
  • 1/2 red onion, thinly sliced
  • A handful of Kalamata olives
  • 100g Greek feta (block)
  • 2–3 tbsp early harvest Greek olive oil
  • 1/2 tsp dried oregano
  • pinch of salt

Preparation method

  1. Place the tomatoes, cucumber, onion and olives in a large bowl.
  2. Place the block of feta on top.
  3. Drizzle generously with early harvest extra virgin olive oil .
  4. Sprinkle with oregano and a pinch of salt.
  5. Serve immediately with fresh bread — or just as is!
