Rustic Pugliese Focaccia with LeFerre Olio di Puglia IGP

Ingredients:

  • 500g bread flour (patent flour)
  • 10g fine sea salt
  • 7g dried yeast
  • 350ml lukewarm water

  • 2 sprigs fresh rosemary
  • 1 tablespoon coarse sea salt flakes
  • Optional toppings: cherry tomatoes, olives or thinly sliced ​​red onion

Preparation method:

  1. Make the dough : In a large bowl, mix the flour and salt. In a separate bowl, combine the water with the yeast and gradually add to the flour mixture. Add 2 tablespoons of your LeFerre Olio di Puglia IGP and mix until you have a sticky dough.
  2. Knead : Place the dough on a floured surface and knead for about 10 minutes until it is smooth and elastic. The dough should feel soft but not too sticky.
  3. First rise : Place the dough in a greased bowl, cover and let rise in a warm place for 1-2 hours until doubled in volume.
  4. Shaping : Grease a baking sheet (approximately 30x20cm) with 1 tablespoon of your premium LeFerre olive oil. Gently stretch the dough so that it fills the baking sheet, keeping as much air in the dough as possible.
  5. Second rise : Cover and let rise for another 30-45 minutes.
  6. Make Dimples : Use your fingertips to make deep dimples in the dough to create the classic focaccia texture.
  7. Add flavor : Sprinkle generously with another tablespoon of LeFerre Olio di Puglia IGP, allowing it to collect in the holes. Sprinkle with rosemary and sea salt.
  8. Baking : Bake in a preheated oven at 220°C for 20-25 minutes until the top is golden brown and crispy.
  9. Finish : Sprinkle the still-hot focaccia with a final touch of LeFerre Olio di Puglia IGP to further emphasise the intense, balanced flavour.
