Anyone who has dined in Puglia knows the ritual. Even before the menu arrives, bread is on the table with a plate of olive oil streaked with dark balsamic. No butter, no spreads — just oil, vinegar, salt. At home, this ritual can be recreated in five minutes, provided you choose two things correctly: the oil and the balsamic.

The recipe: bread dip with olive oil and balsamic

Ingredients:

  • 100 ml fruity extra virgin olive oil
  • 2 tbsp balsamic di Modena IGP with high density
  • ½ tsp coarse sea salt (flakes)
  • Freshly ground black pepper
  • Optional: 1 sprig of rosemary
  • 1 ciabatta or sourdough bread

How to make it:

  1. Pour the olive oil onto a shallow plate — not a deep bowl. This way you dip through the oil, not into it.
  2. Drizzle the balsamic in the middle. Do not stir: the dark pearls in the oil are exactly what you want.
  3. Sprinkle the sea salt and some black pepper around the edge of the oil.
  4. Crush the rosemary sprig between your fingers and place it in the oil.
  5. Heat the ciabatta in the oven for 5 minutes and tear it into rough pieces.
  6. Dipping: first through the oil, then briefly through the balsamic in the middle.

For balsamic, density is everything. A thin, sharp vinegar sinks to the bottom and stings your nose. What is the correct ratio of olive oil and balsamic?

Maintain a 5:1 ratio: five parts oil to one part balsamic. With a thick, sweet balsamic, it can be slightly more; with a young, fresh variety, slightly less. Taste and adjust — the oil should remain dominant.

Which bread is best for dipping?

Ciabatta or sourdough with a firm crust and an open, airy crumb. The crumb soaks up the oil without becoming saturated. Pre-sliced soft bread doesn't work: it collapses and breaks off in the oil. Tearing instead of cutting also creates more rough edges — and that's what the dip clings to.

3 variations on the classic

With garlic and fresh herbs

Rub the plate with a halved garlic clove before pouring the oil. In addition to rosemary, add some thyme and oregano. Let it steep for 10 minutes for a rounder, more Italian dip.

Spicy with chili

Replace the black pepper with a pinch of chili flakes, or mix the base oil with a dash of chili-infused olive oil. The warmth of the chili and the sweetness of the balsamic are a surprisingly strong duo.

Sweet with figs or berries

Replace the classic balsamic with a balsamic-based fruit condiment (fig or berry). Ideal for a cheese board with soft cheeses — the dip then becomes almost a chutney.

Storage and serving

Always make the dip fresh; if stored mixed, it will lose its flavor. The separate bottles are your pantry: olive oil dark and cool (not in the refrigerator), balsamic just in the cupboard — both last for months after opening. Serve the dip at room temperature; cold oil tastes flat.
