Flor de Abeja Arbequina is an exception within its kind. Arbequina is known as the mildest Spanish olive, but this version from the Sierra de Cazorla combines that mildness with a polyphenol content of 500+ mg/kg, a level most Arbequina oils fall far short of.
The secret lies in the harvest timing and speed. The olives are picked while still green in October, at the point when their antioxidant content peaks, and go from tree to cold press within four hours. That explains both the very low acidity of 0.1% and the explosive aroma.
In the glass: intense notes of green apple, banana and freshly cut grass. The flavour starts silky and fruity but ends with a peppery tingle at the back of the throat. That tickle is no coincidence; it is direct proof of the high concentration of oleocanthal.
