Important: this does not mean that a spoon of olive oil replaces a painkiller. The amount of oleocanthal in a daily serving is much lower than an ibuprofen tablet. It's about a small, daily, cumulative effect — exactly how the Mediterranean diet works. See it as a habit, not a medicine.
How much oleocanthal do you need per day?
There is no official daily dosage for oleocanthal as an anti-inflammatory itself. However, there is a recognized benchmark: the European Food Safety Authority (EFSA) approved a health claim for olive oil polyphenols. The claim — laid down in EU Regulation 432/2012 — applies to a minimum of 5 mg of hydroxytyrosol and related compounds per 20 grams of oil per day. Oils that meet this threshold are almost always also rich in oleocanthal, as both compounds are formed together.
Twenty grams is about two tablespoons. Achievable, therefore, if you choose an oil that contains enough polyphenols.
How to recognize an anti-inflammatory olive oil?
You don't need a laboratory. Three signs indicate a high polyphenol content and thus an anti-inflammatory olive oil:
Pepper in the throat. A robust, early-harvest oil tingles at the back of your throat — sometimes you might cough a little. That tingle is oleocanthal. Bitterness on the tongue. Green, unripe olives provide more polyphenols and a bitter note. Freshness above color. A dark green oil is not necessarily healthier, but a fresh harvest is.
